This is a super simple recipe to keep with your stored food, mix the ingredients together and store in ziploc bag or container, or vacuum seal it to keep fresh for much longer. It adds a lot of flavor, and some veggies, to your basic instant rice you probably already have in your pantry for emergencies. Packing it together in batches makes it an easy thing to grab and cook in an emergency situation, and for an inexpensive gift for giving to others for their own supplies.
1 cup instant rice
1 envelope Vegetable soup mix (ie. Knorr, or make your own)
1/2 tsp dried parsley
Combine and store, leaving the soup mix in its envelope. To cook, combine vegetable soup mix with 2-1/2 cups water and bring to a boil. Cover and simmer for 20 minutes. Add rice and parsley, stirring well, then remove pot from heat, cover with a lid, and let sit for 5 minutes. Serve.
